Ingredients
  • 2 cups butternut squash, or other root vegetable, cut into 1-inch cubes
  • 2 cups fresh kale, washed and chopped
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 cup red onion, diced
  • ½ cup celery, diced
  • ½ cup red bell pepper, diced
  • 3-4 tablespoons low-salt or salt-free Cajun seasonings (or make your own*)
  • ½ cup low-sodium chicken broth (more if needed)
  • 1 ½ - 2 cups rice, cooked (brown or white), room temperature
  • Kosher salt to taste
Instructions
  1. Cook squash in lightly salted boiling water, steamer or microwave until just tender. Drain any water and set aside.
  2. Using the same method as with the squash, cook the kale until just wilted. Drain and set aside.
  3. Heat oil in a large sauté pan over medium-high heat. Add ground turkey and onions to pan; break up meat and stir until meat is brown. Drain any excess fat.
  4. Add celery, bell pepper and kale to pan with browned meat and softened onions and heat over medium heat. Add Cajun seasonings and stir until all vegetables are slightly softened.
  5. Add broth, rice and squash and stir until rice is fully incorporated. Adjust seasonings to taste.

*No-Salt Cajun Spice Mix

Ingredients
  • 2½ tablespoons paprika
  • 2 tablespoon garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne (red) pepper*
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
Instructions
  1. Combine all ingredients; store in an airtight container for up to six weeks.
